  • Stir fry carrots, celery, broccoli and onions with cooked chicken breast, tofu or chickpeas topped with your favourite Asian-inspired sauce is a delectable dinner on any night.
  • Serve a big spring salad loaded with veggies, nuts and crumbled cheese topped with grilled salmon for dinner.
  • Sauté shallots, asparagus and fresh spinach for a spring vegetable frittata or quiche.
  • Get creative and swap raw vegetables for pasta.

Tip: Use a vegetable peeler or spiral slicer to make ribbons or noodles out of carrots, zucchini and yellow squash, and top it with your favourite pesto or light tomato sauce.
