Sweet Potato Drop Biscuits with Flavoured Butter

Sweet Potato Biscuits with Cinnamon-Honey Butter

500 mL (2 cups) all-purpose flour
30 mL (2 tbsp) brown sugar
12 mL (2 1/2 tsp) baking powder
3 mL (3/4 tsp) salt
2 mL (1/2 tsp) baking soda
125 mL (1/2 cup) unsalted butter, chilled
1 can sweet potato in light syrup, drained and mashed, or 250 mL (one cup) mashed, cooked sweet potato
125 mL (1/2 cup) buttermilk

Cinnamon-Honey Butter
120 mL (8 tbsp) butter, at room temperature
45 mL (3 tbsp) honey
2 mL (1/2 tsp) ground cinnamon



  1. Place a rack in the middle of the oven. Heat the oven to 220 C (425 F). In a large bowl, whisk the flour, brown sugar, baking powder, salt and baking soda to combine
  2. Cut the butter into small pieces and add it to the dry ingredients. Mix until the largest pieces of butter are about 1 1/2 centimetre (one-half inch). Stir in the buttermilk and sweet potatoes, just to combine
  3. Using a 50 mL (1/4 cup) measure, drop mounds of the dough 5 centimetres (two inches) apart onto a cookie sheet. Bake until the bottoms are golden brown, 14 to 16 minutes

  1. In a small bowl, mix the butter, honey and cinnamon to combine.

Try different flavour combinations for the butter! Add the flavourings to the butter a little at a time. Taste along the way by putting a smidgen of the butter on a biscuit or bread. Keep adding and tasting until it’s just right for you. A few ideas to try:

  1. Ginger-Lemon: dried ginger and freshly grated lemon peel.
  2. Orange-Cardamom: freshly grated orange rind and ground cardamom.
  3. Lemon-Pepper and Brown Sugar: freshly grated lemon peel, ground black pepper and brown sugar.
  4. Nutmeg-Clove: ground nutmeg and ground cloves.
  5. Spicy Jalapeno: minced jalapeno and lime juice.
