1. Grilled Fruit Shortcakes

Ingredients

Shortcakes
175 mL (3/4 cup) flour
30 mL (2 tablespoons) sugar
7 mL (1 1/2 teaspoons) baking powder
.5 mL (1/8 teaspoon) salt
125 mL (1/2 cup) heavy cream, plus more for brushing
2 mL (1/2 teaspoon) vanilla extract
(15 mL) 1 tablespoon brown sugar

Grilled Fruit
Canola oil
2 peaches, cut in half, pits removed
2 plums, cut in half, pits removed
12 large strawberries, hulled (or other berries of your choice)
50 mL (1/4 cup) brown sugar

Topping
Sweetened whipped cream (optional)

Instructions

  1. Preheat oven to 190 C (375 F). In a medium mixing bowl, combine flour, sugar, baking powder and salt. Mix well
  2. In an electric mixer, whip cream with vanilla until soft peaks form. Add flour mixture to cream and beat on low until well blended
  3. Turn dough onto a lightly floured surface and knead gently. Pat dough into a 15 cm (6-inch) circle
  4. Lightly brush dough with cream, then sprinkle with brown sugar. Cut into 4 wedges
  5. Transfer to a baking sheet and bake until golden brown for about 10 minutes. Cool before removing from sheet
  6. Heat grill to medium high. Lightly brush fruit with oil. Grill peaches and plums for about 8 minutes, turning frequently until juicy and grill marked. Add strawberries to the grill during last minute of cooking
  7. When cool enough to handle, cut peaches and plums into chunks. Toss with brown sugar and gently stir in strawberries. Let stand 5 minutes
  8. Split shortcakes in half, and place the bottom halves on dessert plates. Top with fruit, sweetened whipped cream and the top half of the shortcake. Serve

Tip: A variety of berries like raspberries, blueberries and blackberries are plentiful during summer months and can be substituted for personalized flavour. Skewers are recommended for smaller berries that could fall through the grill.

Ingredients
2 ripe bananas
1 bag of large marshmallows
6 graham crackers, halved
6 5-8 cm (2-3-inch) squares of chocolate, dark or milk
6 skewers 

Instructions

  1. Thoroughly clean off the grill, then preheat to medium
  2. Peel banana and slice into 1-inch pieces. Thread one marshmallow and one banana piece on each skewer, then place skewers on a portable grate or wire cooling rack
  3. Place grate on grill, then heat until marshmallows are melted, flipping once. In the meantime, place graham crackers on grate, then top each with a chocolate square and grill until melted
  4. Slide marshmallows and banana pieces onto prepared graham crackers, then top each with a plain graham cracker

3. Grilled Peaches with Ricotta

Ingredients
15 mL (1 tablespoon) honey
2 mL (1/2 teaspoon) vanilla
500 mL (2 cups) ricotta cheese
1 mL (1/4 teaspoon) ground cinnamon
455 grams (1 pound) fresh peaches, halved and cored
75 mL (1/3 cup) pistachios, chopped, for garnish
Fresh berries, for garnish
Freshly chopped mint, for garnish 

Instructions

  1. Combine honey, vanilla, ricotta and cinnamon in a medium-sized bowl. Whip together, using a fork or whisk. Set aside
  2. Combine butter and honey in a medium sauté pan. Heat over medium heat until melted and combined
  3. Brush butter mixture over peaches. Grill cut side down (do not turn) for 3-4 minutes until grill marks form
  4. Remove from the grill and top with ricotta mixture
  5. Garnish with mint, pistachios and fresh berries
