This one’s super easy. Prepare a box of your favourite brand of mac and cheese according to the instructions. Then, fold in diced tomatoes (canned or fresh), and chopped-up chicken breast. Top it with diced celery, blue cheese crumbles and a splash of hot sauce. This is a great recipe to use up leftover chicken!
If there’s one thing that everyone agrees on, it’s that the best part of mac and cheese at restaurants is the top layer of caramelized cheese and breadcrumbs. Recreate that at home by topping any of the first three recipes with breadcrumbs, garlic powder, Parmesan cheese and some parsley. Bake at 220 C (425 F) until golden brown. Amounts vary depending on the recipe, but you can’t go wrong if the top is covered.
