How to Make Apple Cups

Turn a classic fall fruit into a versatile cup filled with treats or autumnal drinks.

Every fall, my family embarks on an apple-picking expedition. Seduced by the autumn sunshine, the sweet smell of apples and the quest for the perfect specimen, we invariably pick way too many. Embracing this tendency, I’ve found some interesting uses for apples that go beyond the recipe book.

How to Make Apple Cups
Making apple cups is simple. All you need is a paring knife or melon baller, lemon juice and apples. The type of apple won’t matter much, but you’ll want to look for the most evenly shaped ones you can find.

Tip: If you plan to serve food in your apple cups, select large, round apples with fairly even bases. If you intend to serve drinks, select taller, narrower apples. If your apples are slightly lop-sided, you’ll need to shave a bit off the base to level them.

  1. Slice the top off the apple and hollow out the inside using a melon baller or paring knife. Be sure to leave the walls at least 1/2 centimetre (1/4 inch) thick
  2. After you’ve hollowed out your apple, brush the exposed flesh with lemon juice to prevent browning

Serving Ideas

To Eat
Apple cups have a home at virtually every meal. They’re a great vehicle for serving oatmeal or yogurt and granola at breakfast, or Waldorf or curried chicken salad at lunch. Dessert options are limitless: try filling them with a scoop of apple crisp à la mode or vanilla ice cream smothered in melted caramel and nuts.

To Drink

Spiced Apple Cider: Simmer 2 litres (1/2 gallon) of fresh cider in a pot with cinnamon sticks and a few cloves. Let cool slightly and pour into apple cups just before serving. Garnish with a cinnamon stick and a slice of orange. Makes about 10 175 mL (6-ounce) servings.

Autumn Punch: Mix 375 mL (1 1/2 cups) of orange juice with 750 mL (3 cups) of ginger ale and 1125 mL (4 1/2 cups) of sparkling cider. Makes 12 175 mL (6-ounce) servings.

Harvest punch: Mix 1000 mL (4 cups) of chilled apple juice with a can of frozen cranberry juice concentrate, 250 mL (1 cup) of orange juice and 1625 (6 1/2 cups) of ginger ale. Makes about 16 175 mL (6-ounce) servings.

Sparkling punch: Mix 87 1/2 mL (3 ounces) of thawed, frozen lemonade concentrate with 1/2 litre club soda and 1 litre of sparkling cider. Taste and add sugar if desired. Garnish with lemon and orange slices. Makes about 10 175 mL (6-ounce) servings.
