Spicy Pork Three Bean Chilli

30 mL (2 tbsp) extra virgin olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
455 grams (1 pound) lean ground pork
15 mL (1 tbsp) cumin
5 mL (1 tsp) smoked paprika
5 mL (1 tsp) chilli powder
1 can diced tomatoes
1 can pinto beans, drained
1 can white beans, drained
1 can kidney beans, drained
15 mL (1 tbsp) chopped cilantro, plus more for garnish
Sea salt, to taste
Shredded Monterey Jack cheese, to garnish

Tip: For a kid-friendly chilli, go light on the spices. Try halving the amount of chilli powder and tasting the paprika before you add the full amount — some are hotter than others.


  1. In a large Dutch oven or stock pot over medium heat, sauté onion, bell pepper and garlic in oil until tender, about 8-10 minutes
  2. Add ground pork and mix well
  3. Add cumin, paprika and chilli powder, and then stir to coat
  4. Cook, stirring occasionally, until the meat is browned well
  5. Stir in diced tomatoes (with juice), beans, cilantro and sea salt
  6. Cover and let simmer for 20-30 minutes, until desired consistency is reached
  7. Serve in bowls and garnish with shredded cheese and cilantro

Tip: Enjoy leftover chilli on its own or get creative with it. For a yummy burrito, layer flour tortillas with reheated chilli, shredded lettuce, cheese and sour cream, and then roll.
