Ingredients
2 cups quick-cooking grits
1 1/2 cup shredded cheddar cheese
1 tablespoon olive oil
1 yellow onion, chopped
3 cloves garlic, chopped
6 slices of ham, chopped
1 can (8 ounces) diced tomatoes
1 1/2 pounds uncooked shrimp, peeled and de-veined
1 teaspoon dried oregano
Sea salt, to taste
Chili flakes, to taste
Hot sauce, optional
Instructions
- Cook grits according to package directions, folding in cheese and 1 clove of garlic when cooked
- While grits are cooking, heat olive oil in a skillet over medium heat. Add onion, 2 cloves of garlic and ham, then cook until onion is soft and golden brown, about 5-8 minutes
- Add tomatoes (with juice), and shrimp. Cook until shrimp is pink and opaque
- Season shrimp mixture with oregano, sea salt and chili flakes. Stir gently
- Spoon grits into bowls, then top with shrimp and sprinkle with chili flakes, oregano and a splash of hot sauce, if desired
