Sour Cream and Dill Potato Salad

This tasty, gourmet twist on the classic potato salad is sure to please.


Ingredients (serves 7 people)

  • 2.3 kilograms (5 pounds) of red bliss potatoes diced to about 1-inch pieces
  • 1 small red onion, diced
  • 1 small bunch of dill, chopped finely
  • 1 bunch of scallions, diced finely
  • 2 cloves of garlic, minced finely
  • 225 grams (8 ounces) of sour cream
  • 30 millilitres (2 tablespoons) of whole grain mustard
  • 30 millilitres (2 tablespoons) of apple cider vinegar
  • 5 millilitres (1 teaspoon) of coarsely ground black pepper
  • 5 to 10 millilitres (1-2 teaspoons) of sea salt
  • 5 to 10 millilitres (1-2 teaspoons) of honey

Directions

  1. Place the diced red potatoes into a pot of cold water and slowly bring to a boil.


  2. Check the firmness of the potatoes in the water with a fork often, and cook until a fork easily passes through a potato piece.


  3. Strain and rinse with cold water and allow the potatoes to cool in the refrigerator for 2 hours.


  4. While the potatoes are cooling, combine all of the other ingredients in a large mixing bowl, remembering that the salt will need to be adjusted after the potato salad sits for a few hours.


  5. Add the cooked potatoes and thoroughly mix together.


  6. Store in an airtight container until serving.

I agree with OldChick. We've always mashed our potatoes for any potato salad. You don't get any dry potatoes. Every bite has every taste you need! Everyone says it's crazy until they try it. Thanks mom & dad! Best cooks!

I make something like this, however, with the appearance of 'greek yogurt', I've taken this to a protein filled level! And always use FRESH dill not dried. It just adds the pretty green, and a much tastier bouquet. YUM!!!!!

Here in NL, we mash our potato salad, and its more tasty the chunky potato salads. You should give it a try. I'm going to try this, but with it mashed, as we like it here.

This sounds really delicious, and I am gonna try it. Mind you I have made potato salad with sour cream and I find it doesn't stick perfectly to the potatoes. I think I will substitute 1/4 of the sour cream with cream cheese to thicken the consistency. Great recipe thanks for sharing :)
