Lentil Soup Recipe

Warm up with some hearty, wholesome lentil soup this season.

6 strips of bacon, cut into 1/2-inch pieces
2 large onions, chopped
5 carrots, peeled, halved and finely chopped
6 garlic cloves, minced
60 mL (4 tbsp) tomato paste
1125 mL (4 1/2 cups) lentils, picked over and rinsed
5 mL (1 tsp) dried thyme
3 litres (12 cups) chicken broth
1.5 litres (6 cups) water
15 mL (1 tbsp) red wine vinegar
Salt and pepper
Parmesan shavings, optional


  1. In a Dutch oven or large pot, brown bacon over medium heat until crisp, about 8-10 minutes
  2. Pour off the remaining fat, leaving 15-20 mL (3-4 tbsp)
  3. Add onion and carrots and cook until softened, about 5 minutes
  4. Stir in garlic and cook until fragrant, about 30 seconds
  5. Stir in tomato paste and cook for 1 minute
  6. Add lentils, thyme, broth and water and bring to a boil
  7. Reduce to a simmer and cook until lentils are tender, about 30-45 minutes
  8. If soup thickens too much, add more water
  9. Stir in vinegar, salt and pepper
  10. Top with optional cheese shavings and serve with a hunk of multigrain bread
