Rock Candy Recipe
Makes: 340 grams (12 ounces) of candy

Ingredients

Wooden skewers
Wooden craft sticks or pencils
Clean litre glass jars
500 mL (2 cups) water
1000 mL (4 cups) granulated sugar, plus extra for assembly
Instructions
- Tie skewers to craft sticks perpendicularly, so you’re able to suspend the skewers in the middle of the jars so they aren’t touching the bottom or sides
- In a medium saucepan, bring 500 mL (2 cups) of water to a boil. Add the sugar 250 mL (1 cup) at a time, stirring until the sugar is dissolved before adding the next cup
- Remove the solution from heat and let sit for 5 minutes
- While the solution is cooling, moisten skewers in water and roll in granulated sugar until they’re lightly covered
- Carefully pour syrup into the jars. Then, lower one skewer into each jar
- Loosely cover the top of each jar with a paper towel or foil to prevent dust from getting into the mixture. Don’t seal tightly, leaving ventilation for the water to evaporate
- Let sit undisturbed for 5-7 days. The crystals will begin to form within a few hours and continue for several days
- Once crystals form, remove the skewers and let dry. Wrap in cellophane, tie off with string or ribbon and store in a cool, dry place
