Ingredients
750 mL (7 cups) watermelon, seeded and chopped (a 4- to 5-pound watermelon)
125 mL (1/2 cup) sugar
30 mL (2 tbsp) lemon or lime juice
Pinch of salt
Lemon or lime slices, to garnish
Instructions
- Working in batches, purée 2 or 3 handfuls of watermelon at a time in a food processor or blender until smooth
- Measure 100 mL (4 cups) puréed watermelon and transfer into a large mixing bowl
- Add sugar, citrus juice and salt, whisking until sugar dissolves
- Pour mixture into 33-by-23-centimetre (13-by-9-inch) pan and place in freezer for approximately 45 minutes, or until the edges begin to ice
- Remove pan from freezer, whisk mixture again and return to freezer and let sit an additional 45 minutes, or until mixture becomes slushy
- Remove pan from freezer again, whisk once more and return to freezer
- Let sit 3 hours, or until mixture is solid (keep frozen until ready to serve, up to one day in advance)
- To serve, scoop granita into bowls or glasses
- Garnish with a wedge of fresh watermelon
