Rice and Shine: Rice Pudding

Ingredients
500 mL rice
500 mL milk
250 mL cream
5 mL vanilla
75 mL sugar
1 mL salt
1 mL cinnamon
3.5 mL cornstarch
22.5 water
6 egg yolks

Instructions

Whisk 500 mL milk, 250 mL cream, 5 mL vanilla, 75 mL sugar and 1 mL salt in medium saucepan over medium heat. Simmer

Combine 1 mL cinnamon, 15 mL cornstarch and 22.5 mL water, whisk into saucepan

In medium bowl, beat 6 yolks. Slowly whisk half the milk mixture into egg. Lower heat to medium-low and return egg and milk mixture to pot, whisking constantly

When mixture thickens add 500 mL rice. Stir until rice is warmed through

Pour pudding into serving dish or individual custard cups. Chill in refrigerator for 1 hour. Garnish with cinnamon or brown sugar
