Creating a seasonal salad is easy! Simply choose a few fruits or vegetables that are fresh for the season and add complementary flavours and textures with nuts, seeds, cheeses and herbs. Here are delicious salad recipes to celebrate the flavours of every season.

Spring

In Season:
Arugula
Spinach
Snap peas
Green beans
Beets
Strawberries
Broccoli
Chives
Artichokes
Asparagus

Spring: Balsamic Strawberry and Goat Cheese Salad
Serves: 4-6
Prep Time: 15 minutes

Ingredients
125 grams (about 1/4 pound) baby spinach
500 mL (2 cups) strawberries, sliced
125 mL (1 cup) candied walnuts
85 grams (3 oz.)crumbled goat cheese
125 mL (1/2 cup) extra virgin olive oil
50 mL (1/4 cup) balsamic vinegar
Freshly cracked pepper to taste

Instructions

  1. Transfer spinach into a large salad bowl
  2. Top with strawberries, walnuts and goat cheese
  3. In a small bowl, whisk together the oil and vinegar
  4. Serve salad with vinaigrette

Summer

Zucchini
Cucumber
Melon
Tomatoes
Blueberries
Raspberries
Corn
Peppers
Eggplant

Apricots

Summer: Raw Zucchini Salad
Serves: 4
Prep Time: 15 minutes

Ingredients
1 large zucchini, julienned or sliced into ribbons with a vegetable peeler
1 large tomato, cut into wedges
1 large avocado, peeled, pitted and sliced
30 mL (2 tbsp) toasted pine nuts or walnuts
50 mL (1/4 cup) loosely packed fresh basil leaves, sliced or torn
50 mL (1/4 cup) extra virgin olive oil
30 mL (2 tbsp) good balsamic vinegar
Pinch of sea salt

Instructions

  1. Place zucchini in a serving bowl
  2. Arrange tomatoes, avocado and basil on top
  3. Sprinkle with pine nuts
  4. Dress with olive oil and balsamic vinegar to taste, and sprinkle with sea salt

Fall: Harvest Salad
Yield: Serves 4-6

Ingredients
150 grams (5 oz.) baby kale or other favourite greens
125 mL (1/2 cup) grapes
50 mL (1/4 cup) pomegranate seeds
1 apple, diced
50 mL (1/4 cup) pumpkin seeds
50 mL (1/4 cup) crumbled feta cheese
Favourite dressing or extra virgin olive oil and apple cider vinegar

Instructions

  1. Place greens in a salad bowl and arrange grapes, pomegranate seeds, apple, pumpkin seeds and cheese on top
  2. Toss with dressing just before serving

Winter

In Season:
Winter squash
Kale
Blood oranges
Mandarin oranges
Brussels sprouts
Pears
Pomegranate
Persimmon

Winter: Sweet Potato Salad
Yield: serves 4-6

Ingredients
150 grams (5 oz.) baby spinach
2 medium sweet potatoes, peeled and cubed and roasted
30 mL (2 tbsp) extra virgin olive oil
125 mL (1/2 cup) dried cranberries
50 mL (1/4 cup) crumbled bleu cheese
50 mL (1/4 cup) candied pecans
Favourite dressing or extra virgin olive oil and apple cider vinegar

Instructions

  1. Transfer lettuce to a large salad bowl and top with dried cranberries, cheese, pecans and cooled roasted sweet potatoes
  2. Toss with dressing just before serving
