3 Quick and Simple Dinners on Busy Nights

Enjoy these simple, nutritious evening meals – perfect for a speedy supper when your schedule is packed.


When your schedule doesn’t allow for a three-course dinner (and whose does?), you need some go-to recipes for busy nights.

One-Pot Risotto
Risotto is both tasty and filling, and although this dish requires attention as you add the liquid, it’s happy to simmer for 25 minutes while you tidy up the kitchen or load the dishwasher.

Ingredients
45 g unsalted butter, divided
1 small onion, chopped
1 small fennel bulb, chopped
380 g Arborio rice
180 mL dry white wine
1.9 L chicken stock
450 g jumbo shrimp, peeled
30 g Parmesan cheese
Salt and pepper to taste
Parsley, chopped

  1. Melt 30 g of butter in a large pot. Add onion and fennel, and stir until soft
  2. Add 480 mL of Arborio rice. Slowly stir in white wine and chicken stock a bit at a time, adding more liquid as it’s absorbed, stirring continuously. Simmer for 25 minutes
  3. Add raw shrimp, and cook for two to three minutes. Stir in 15 g of butter and Parmesan cheese. Season with salt and pepper to taste. Garnish with parsley if desired

Indoor Picnic
For an easy dinner, break out the picnic blanket and set up mealtime on the living room floor. (Keep those napkins handy!) Cook up tasty hot dogs on traditional buns with ketchup and mustard, or get creative with your buns, toppings and garnishes. Serve with a big bowl of coleslaw.

Baked Salmon with Herbs
Salmon baked in the oven doesn’t need a lot of oversight – take our word for it! The coating of olive oil and mixed herbs on top of the salmon protects it from the heat and prevents it from overcooking. Serve with warm ciabatta and a salad for a delicious, no-stress meal in about 30 minutes.

Ingredients
60 mL and 15 mL olive oil, divided
450 g salmon fillet
1 large shallot, finely chopped
15 mL dried dill
15 mL fresh parsley, chopped
Salt and pepper to taste

  1. Preheat oven to 250 F. Pour 60 mL olive oil into a deep baking tray or sheet pan. Place salmon on tray, skin side down. Season with salt and pepper, to taste
  2. Combine shallot, dill, parsley and 15 mL of olive oil, and spread mixture on top of salmon
  3. Bake for 25 minutes. If the fish flakes easily with a fork, it’s done. If not, pop it back in for another five minutes
