Skip the traditional macaroni or potato salad from the supermarket this time and make one of our delicious picnic salads instead! All three are super simple to throw together, travel well and will hit the spot for every member of your family.

1. Italian Pasta Salad Recipe
Serves: 5-10
Prep time: 10 minutes

Ingredients
340 grams (1 12-ounce package) bowtie pasta
55 grams (2 ounces) crumbled feta cheese
285 grams (1 10-ounce package) baby spinach leaves
1 tomato, diced
1 cup Italian salad dressing
Juice of one lemon
Salt and pepper to taste
1 can black olives, drained (optional)

Instructions

  1. Prepare pasta according to directions on package. Drain
  2. Transfer pasta to mixing bowl and add feta cheese, baby spinach leaves and diced tomato. Add the olives, if desired
  3. In a separate bowl, mix together salad dressing and lemon juice, adding salt and pepper to taste, for the vinaigrette. Pour your vinaigrette over pasta and toss. Refrigerate for 4 hours. Serve chilled

2. Fiesta Corn and Black Bean Salad
Serves: 4

Ingredients

Salad
1 can (15 oz.) black beans, rinsed and drained
1 can (15 oz.) corn, drained
1 can (15 oz.) diced tomatoes with green chilies, drained
1 red bell pepper, seeded and diced
1/2 small red onion, diced
1/4 cup cilantro, finely chopped 

Dressing
125 mL (1/2 cup) canola oil
5 mL (1 teaspoon) chili powder
Juice of 1 lime
Salt and pepper, to taste

  1. Combine all salad ingredients in a medium-size bowl
  2. In a separate small mixing bowl, combine all dressing ingredients with a whisk
  3. Pour dressing over salad mixture, gently tossing with a large spoon. Season with additional salt and pepper to taste, then place in the refrigerator until ready to serve

Tip: Our simple dressing is light and fruity with a spicy kick, just right for salads. But that’s not all — next time, try doubling the recipe and using half of it to marinate chicken or shrimp!

3. Crunchy Asian Noodle Salad

Salad
1 large bag coleslaw mix
2 packages of ramen noodles, crushed
75 mL (1/3 cup) sliced almonds
125 mL (1/2 cup) snap peas
1 avocado, peeled, pitted and diced
125 mL (1/2 cup) green onions, sliced
Sesame seeds (optional)

Dressing
125 mL (1/2 cup) canola oil
75 mL (1/3 cup) cup honey
125 mL (1/2 cup) rice wine vinegar
10 mL (2 teaspoons) soy sauce
2 mL (1/2 tablespoon) sesame oil

Instructions

  1. Combine all ingredients in a large serving bowl
