Meals for Two: Split Pea Soup

Whip up this hearty, healthy soup that is just right for an easy dinner on a cold night.

Serves: 2 (2 1/2-cup servings)

1 tablespoon olive oil
1 medium onion, chopped
3 15 1/2-ounce cans chicken broth
1/2-3/4 pound smoked ham hock, soaked overnight in cold water
1 1/2 cups green split peas
1 stalk celery, chopped
1 large carrot, chopped
2 1/4 teaspoons Italian seasoning*

*Tip: You may substitute the Italian seasoning for 1 small bay leaf, 1 1/2 teaspoons dried leaf marjoram, 3/4 teaspoons dried thyme and 1/4 teaspoon ground black pepper.


  1. In a large pot, heat olive oil over medium high heat until it shimmers
  2. Add the onion and cook, stirring occasionally until it begins to brown, 3 to 5 minutes
  3. Add the broth, ham hock, split peas, celery, carrot and seasoning. If the hock is not covered in liquid, add enough water to cover it
  4. Bring to a boil; skim off any film from the surface. Reduce heat to medium low and simmer until the split peas are very tender, 1 to 1 1/2 hours
  5. Remove the ham hock and reserve. Using an immersion or stand blender, puree the soup
  6. Remove meat from hock and chop into small pieces. Stir the ham into the soup or use it as garnish
