Individual Drop Biscuit Cobblers Recipe

You’ll need: 6 ramekins

375 mL (1 1/2 cups), plus 45 mL (3 tablespoons) all-purpose flour
45 mL (3 tablespoons), plus 250 mL (1 cup) sugar
2 mL (1/2 teaspoon) cinnamon
3 mL (1 1/2 teaspoons) baking powder
2 mL (1/2 teaspoon) kosher salt
90 mL (6 tablespoons) chilled, unsalted butter cut in 7 mL (1/2 tablespoon) pieces (freeze for 10 minutes)
125 mL (1/2 cup), plus 15 mL (1 tablespoon) sour cream
1500 mL (6 cups) organic fresh berries*
30 mL (2 tablespoons) fresh lemon juice
15 mL (1 tablespoon) lemon zest, finely grated
1 small bunch fresh mint
Vanilla ice cream or frozen yogurt

*Tip: Use your favourite fresh berry to customize your cobbler.

  1. Preheat oven to 190 C (375 F)
  2. Whisk 375 mL (1 1/2 cups) flour, 45 mL (3 tablespoons) sugar, cinnamon, baking powder and salt in a large bowl
  3. Add butter, and using your fingertips, pinch the butter and dry mix together until only pea-size lumps remain
  4. Gently fold in the sour cream
  5. Knead mixture in a bowl until dough forms. Be careful not to over mix, 5-6 turns should bring it all together. (If you over mix, the dough will be tough)
  6. Combine remaining 250 mL (1 cup) sugar, 45 mL (3 tablespoons) flour, berries, lemon juice and lemon zest in another large bowl. Toss together to coat the berries
  7. Pour berry mixture evenly into small ramekins. Add biscuit topping into quarter-sized crumbles over the berries
  8. Bake for 20-25 minutes, until the juices are thick and bubbling and topping is deep golden brown
  9. Let cool for at least 1 hour. Serve with vanilla frozen yogurt or vanilla bean ice cream. Garnish with mint and lemon zest
