Homemade Raspberry Sorbet

No ice cream maker required! Just blend 4 ingredients and freeze for a summery treat.

Homemade Raspberry Sorbet Recipe

2 litres (2 quarts) raspberries, rinsed
125 mL (1/2 cup) honey
250 mL (1 cup) water
50 mL (1/4 cup) lime juice

  1. Put the raspberries, honey and lime juice in a food processor, blend until very smooth and set aside to cool
  2. Pass the mixture through a fine colander or strainer
  3. Pour the mixture into a 23-by-33-centimetre (9-by-13-inch) pan lined with parchment paper and freeze until solid
  4. Once frozen, break the frozen mixture into pieces and blend in the food processor again (you may need to do this in small batches)
  5. Freeze mixture again
  6. Allow sorbet to soften for a few minutes at room temperature before serving
