Instructions

  1. In a small saucepan over medium heat, combine berries and 375 mL (1 1/2 cups) juice and bring to a boil
  2. Cook berries until they start to soften
  3. Puree the berry and juice mixture with an immersion blender or regular blender until smooth, and then set aside
  4. In a large bowl, sprinkle two packets of gelatine over the remaining cold juice and let stand for 1 minute
  5. Add the puréed mixture to the cold juice and gelatine mixture, and stir until gelatine completely dissolves (2-3 minutes)
  6. Line a 33x23x5 centimetre (13x9x2 inch) pan with plastic wrap, and then pour the mixture on top
  7. Allow to set until firm, approximately 3 hours
  8. Remove from pan by pulling out with plastic wrap, then cut into 2.5 centimetre (1-inch) squares and serve
  9. Store remaining fruit snacks in the refrigerator

Fruit Snack Tips

  • To create sweeter snacks, use fruits at their ripest stage. If they’re not mature and tart, add 15-30 mL (1-2 tbsp) of honey to taste
  • For a deeper flavour, try using fruit juice concentrate instead of fruit juice
  • If using fresh fruit like figs, papaya, pineapple or pears, first boil the peeled cut-up fruit for 5 minutes or the gelatine will not set properly
