Instructions

  1. Preheat oven to 190 C (375 F). Generously grease a cookie sheet with non-stick cooking spray or line with parchment paper. Set aside a muffin pan
  2. Prepare the fortunes on small strips of paper
  3. In a large bowl, beat egg whites and vanilla until frothy (about 2 minutes)
  4. Add butter to egg whites and mix to combine
  5. Gradually add flour to egg white mixture and beat until smooth. Using a wooden spoon, stir water into batter
  6. Spoon 7 1/2 centimetre (3-inch) circles on the prepared cookie sheet, then spread as thinly as possible. To facilitate folding, spoon and bake only 4 rounds onto each cookie sheet at a time
  7. Bake fortune cookies for about 14 minutes or until outer edges have browned
  8. When cookies are done baking, remove from oven and place fortune in the centre of each round
  9. Working quickly, fold each round in half and gently pull the edges downward
  10. Place cookies in muffin pan and allow to cool completely
