Bacon, Avocado & Pepper Jack Omelet

Ingredients

Cooking spray
2 eggs, beaten*
Salt and pepper
1/4 cup pepper jack cheese, shredded
2 slices bacon, cooked and crumbled
1/4 avocado, sliced or diced
Fresh salsa, to garnish
Sour cream, to garnish
Fresh cilantro, chopped to garnish

*Tip: For a fluffier omelet, separate the eggs before beating. Whisk the whites until light and frothy. In a separate bowl, beat the yolks with a fork, and then fold them together.

Tip: Avocado pairs perfectly with eggs. Dice up a few and throw them in with your scrambled eggs in the morning.

Instructions

1. Spray a small skillet with cooking spray and set over medium heat

2. Season beaten eggs with salt and pepper, and then pour into skillet. Quickly tilt the pan to cover with egg

3. Using a spatula, lift the edges of the egg and tilt the pan to allow uncooked egg to flow around the pan. Continue lifting the edges and tilting the pan until the omelet is set but still moist, about 2 minutes

4. Place the cheese, bacon and avocado on one side of the omelet. Fold over to cover the fillings. Cook 1 minute

5. Gently slide onto serving plate. Garnish with sour cream, salsa and cilantro, and then serve

Lunch
When it’s time to enjoy a quick bite for lunch, you can still think avocado! Prep some avocado egg salad ahead of time and toss it in a pita for a wholesome lunch, or, if you have some extra time, gussy up a grilled cheese with delicious avocado!

Pressed for time in the morning? Need a quick and easy snack that packs a high-protein punch?

Toast two pieces of grainy, rustic and nutrient-full bread and smear 1/2 avocado on them for a fast energy boost. Top with cherry tomato slices, chili flakes and sprinkle goat cheese for extra flavor. Or, add two eggs (your way) on top. Delish.

Dinner


Set out a wholesome dinner for the whole family that highlights avocados in every bite. Baking avocados topped with feta and tomato is a perfect, light option everyone will love. Or, fire up the grill and serve some burgers stuffed with guacamole and cheese.

Baked Stuffed Avocados with Sautéed Shrimp, Onion and Parmesan

Instructions

1. Sauté 1 diced medium-sized sweet onion with 2 pats of butter in a small skillet until translucent

2. Add 1 clove of minced garlic and stir frequently 5-8 minutes until the mixture is soft and slightly browned

3. Add to the avocado flesh, mix thoroughly, and then spoon into avocado shells

4. Place 4-5 thawed baby shrimp in each shell, set them in a baking dish, and generously sprinkle with 1/2 cup grated Parmesan cheese

5. Bake for 12-15 minutes

6. Add salt and pepper to taste.

7. Serve immediately
