Nothing says summer like fresh, golden corn on the cob. You and your children can appreciate the silliness of eating with your hands, and getting kernels in your teeth and butter all over your faces. Enjoy the mess together this summer with these five flavourfully simple corn on the cob recipes.

5 Flavourful Butter Mixture Recipes
These dramatically different concoctions can dress up your corn on the cob. Combine all ingredients in a small bowl, mix and set aside. Apply mixture to corn with a pastry brush after soaking and before grilling. Mixtures yield enough for six ears of corn.

1. Garlic Basil

  • 90 mL (6 tablespoons) softened salted butter
  • 30 mL (2 tablespoons) minced garlic
  • 10 mL (2 teaspoons) chopped basil

2. Cilantro Lime

  • 250 mL (1 cup) softened unsalted butter
  • 125 mL (1/2 cup) chopped cilantro
  • Zest and juice from 1 lime
  • 10 mL (2 teaspoons) salt

3. Lemon Thyme

  • 75 mL (5 tablespoons) softened unsalted butter
  • 30 mL (2 tablespoons) thyme
  • 2 mL (1/2 teaspoon) lemon juice
  • 2 mL (1/2 teaspoon) salt

  • 125 mL (1/2 cup) softened unsalted butter
  • 15 mL (1 tablespoon) minced chives
  • 15 mL (1 tablespoon) minced fresh dill
  • 2 mL (1/2 teaspoon) lemon juice
  • 1 mL (1/4 teaspoon) garlic salt

5. Zesty Horseradish

  • 75 mL (1/3 cup) softened unsalted butter
  • 30 mL (2 tablespoons) mustard
  • 30 mL (2 tablespoons) horseradish
  • 5 mL (1 teaspoon) Worcestershire sauce
  • 2 mL (1/2 teaspoon) lemon pepper seasoning

Grilling Instructions

  1. Pull back husks and soak in water for 20-25 minutes
  2. Pat kernels dry and add butter mixture
  3. Pull husks back up and grill for 20 minutes

Roasting Instructions

  1. Pull back husks and remove silk
  2. Apply butter mixture and return husks back up
  3. Line oven bottom with aluminium foil
  4. Place cobs directly on oven rack and roast at 180 C (350 F) until soft, about 30-40 minutes

Tip: For pre-shucked corn, wrap each cob individually with aluminium foil after applying butter.
