Chocolate Lava Cake Recipe

Use our instructions to make a five-star quality chocolate lava cake from scratch.

Molten lava cake is the perfect decadent dessert to share with your Valentine or family. Although it’s often a five-star favourite, molten lava cakes are easy to make. Lava cake is also the perfect dinner party dessert. Since it’s served warm, you can prepare it prior to guests arriving and pop it in the oven while everyone is enjoying the main course. Remove from the oven, garnish with powdered sugar, ice cream or fruit, and you will quickly become everyone’s favourite chef.

2 large egg yolks
2 large whole eggs
75 mL (5 tbsp) granulated sugar
2 mL (1/2 tsp) vanilla extract
100 grams (3 1/2 ounces) (1 bar) chopped dark chocolate
75 mL (5 tbsp) butter
20 mL (4 tsp) unsweetened cocoa powder
60 mL (4 tbsp) flour
1/2 mL (1/8 tsp) salt
Fresh fruit, powdered sugar and/or mint (for garnish)


  1. Generously grease four ramekins with butter or non-stick cooking spray
  2. Fill a small saucepan half way with water and bring to a boil
  3. In a glass bowl, combine chopped chocolate and butter and place on top of saucepan
  4. Stir chocolate until melted, then remove bowl from heat
  5. In a bowl, combine eggs, egg yolks and sugar. Whisk with a mixer or by hand until the mixture is pale yellow
  6. Add melted chocolate to egg mixture slowly while mixing. Mix in vanilla
  7. Sift cocoa powder and flour into batter and add salt. Mix to combine
  8. Pour batter into individual ramekins and cover with plastic wrap
  9. Refrigerate ramekins for 30 minutes
  10. Preheat oven to 220 C (425 F)
  11. Place ramekins in a shallow baking dish and fill dish half way with hot water
  12. Bake ramekins for 15-18 minutes or until the cake edges start to pull away from the sides
  13. Allow cakes to cool for 5 minutes then run a knife around the edges to release the sides
  14. Place a plate over individual ramekins and turn to release. Sprinkle lava cakes with powdered sugar, mint leaves and fresh fruit, if desired
