Cheesy Veggie Quinoa Casserole

Whip up this vegetarian superfood casserole with our simple recipe.

This dish is beyond easy to prepare and requires very little culinary skill beyond chopping an onion and sautéing mushrooms. Simply mix quinoa — an easy-to-make power grain — with gooey cheese, meaty mushrooms and sweet zucchini for a quick, vegetarian-friendly meal.

15 mL (1 tbsp) olive oil
250 mL (1 cup) sliced, white button mushrooms
3 eggs
40 mL (1/4 cup) milk
500 mL (2 cups) quinoa, cooked according to package instructions
250 mL (1 cup) shredded zucchini, drained in colander or on paper towels to remove extra water
250 mL (1 cup) shredded cheese (sharp cheddar or cheddar mix)
50 mL (1/4 cup) minced onion
5 mL (1 tsp) kosher salt
5 mL (1 tsp) ground pepper
45 mL (3 tbsp) grated Parmesan

Tip: If you can’t find quinoa in the rice and beans aisle, try looking in the natural or bulk foods section of your grocery store.

  1. Preheat oven to 190 C (375 F)
  2. Grease a 23-by-23 centimetre (9-by-9 inch) baking dish
  3. Sauté mushrooms in a skillet with olive oil until golden brown, about 10 minutes
  4. Beat eggs and milk in a large bowl
  5. Add all other ingredients except grated cheese
  6. Spread mixture in prepared baking dish and sprinkle remaining grated cheese on top
  7. Bake for 20 minutes, until top is slightly golden
  8. Add more salt to taste before serving

  • Serve alone as a side dish, with just a little bit of oil, salt and pepper, or other seasonings
  • Keep a container of cooked quinoa in the fridge, and then mix with yogurt, dried fruit, cinnamon, milk or honey for a quick breakfast
