Directions for Making Compound Flavoured Butters

  1. Add all ingredients to a large mixing bowl. Using a hand mixer, combine all ingredients thoroughly
  2. Place a 30 1/2 centimetre (12-inch) sheet of plastic wrap onto a table or clean workspace. Using a rubber spatula, spoon the compound butter onto the centre of the plastic wrap
  3. Pull the bottom portion of the plastic wrap up over the butter and start rolling, forming a log shape. Close the ends of the plastic wrap and let the butter set in the refrigerator for 2-3 hours

1. Raspberry Lemon Butter
455 grams (1 pound) unsalted butter, room temperature
15 mL (1 tbsp) lemon juice
Zest from 2 lemons
45 mL (3 tbsp) raspberry jam

Serve on: Cinnamon bread, French toast, toast, muffins and waffles.

2. Basil Olive Oil Butter
455 grams (1 pound) unsalted butter, room temperature
15 mL (1 tbsp) extra virgin olive oil
125 mL (1/2 cup) basil, chopped
50 mL (1/4 cup) chives, chopped
15 mL (1 tbsp) heavy cream
Pinch of salt

Serve on: white fish, chicken, pork, seafood and baguettes.

3. Peach Pecan Butter
455 grams (1 pound) unsalted butter, room temperature
75 mL (1/3 cup) pecans, chopped
75 mL (1/3 cup) peach preserves
30 mL (2 tbsp) brown sugar
5 mL (1 tsp) cinnamon

4. Southwest Chilli Butter
455 grams (1 pound) unsalted butter, room temperature
Zest from 2 limes
30 mL (2 tbsp) paprika
30 mL (2 tbsp) chilli powder
15 mL (1 tbsp) cumin
2 jalapenos, minced
Pinch of salt

Serve on: Baked potatoes, grilled steak, pork, chicken, shellfish or any fish.

5. Blueberry Orange Butter
455 grams (1 pound) unsalted butter, room temperature
125 mL (1/2 cup) blueberries, chopped
Zest from 1 small orange
30 mL (2 tbsp) orange juice

Serve on: Breakfast bread, English muffins, toast and waffles.

6. Spicy Lime Butter
455 grams (1 pound) unsalted butter, room temperature
7 mL (1/2 tbsp) smoked paprika
125 mL (1/2 cup) Sriracha hot sauce
45 mL (3 tbsp) lime juice
Zest of 2 limes
1 bulb garlic, minced
Pinch of salt
Pinch of sugar

7. Roasted Garlic Herbed Butter
455 grams (1 pound) unsalted butter, room temperature
250 mL (1 cup) roasted garlic bulbs, minced
30 mL (2 tbsp) chive
30 mL (2 tbsp) rosemary
15 mL (1 tbsp) thyme
Pinch of salt
