Spiced Orange-glazed Pork Chops

11 1/2-centimetre thick boneless loin pork chops (2)
125 mL chicken broth
50 mL orange marmalade
1 mL red pepper flakes
5 mL dried tarragon, crumbled, or 15 mL fresh tarragon, chopped

  1. Season pork with salt and pepper
  2. In a large skillet over medium high heat, heat 1 tablespoon oil until it shimmers
  3. Add pork chops and cook 7-8 minutes, turning once
  4. Remove chops from pan and set them aside
  5. Remove the pan from the burner and wipe off remaining oil with a paper towel
  6. Place pan back on stove and add broth, marmalade and red pepper flakes
  7. Cook over low heat for about 4 minutes until mixture is reduced by half and forms into a glaze
  8. Add tarragon and stir to incorporate
  9. Pour sauce over chops


  • Zest it up: All orange marmalades are not created equally. Taste the glaze and if there isn’t a strong enough orange flavour, stir in 1 teaspoon of freshly grated orange zest.
  • Check Your Spice: Flavours of herbs and spices will degrade over time. If you just purchased red pepper flakes, perhaps you should cut it back a little from the amount in the recipe. By the same token, if you have had tarragon on the spice shelf for longer than you can remember, add more than the recipe calls for, a little at a time, tasting along the way.
