What’s better than a lazy morning in your PJs? A lazy morning in your PJs with pancakes! There’s nothing quite like staying cozy in pajamas and slippers while sipping coffee and mixing up some tasty pancakes.
And oh my, is it worth the dishes that follow!

We’ve gathered some tips for you to enjoy your lazy Saturday even more the next time you get the chance. Think blueberry eyes and maple syrup smiles. You have permission to get in touch with your inner silliness as you experiment with new flavours and textures.
Create Custom Shapes
- To make fun shapes, add a little water to your pancake batter and pour it into squeeze bottles first.
- Make the outline of your pancake art first, and then fill it in.
To create detailed art with the squeeze bottle: first put down the layer that you want to appear darker. For example, for a smiley face you’ll draw the dots, the smiles and the outside circle, and let that cook a little bit. Then fill in the rest of the shape and flip when ready. You can experiment with as many darkness levels as you want.
Or Try Cookie Cutters
There are two great ways to use cookie cutters. You can put the metal cookie cutter directly on the griddle, and then fill it in with batter. Carefully remove the cookie cutter (it will be hot) before flipping.
If you want to get the kids involved, cook the pancakes in the traditional style, and then have them cut out shapes with cookie cutters.
Switch up Your Sweet Stacks
1. Add Fruit
Seasonal fruits ranging from berries to thinly sliced apples make great additions to pancake batter, as do bananas. Dried fruit, such as raisins, currants or cherries also make for excellent fruit-filled flapjacks.
2. Get Your Chocolate Fix
Swirl a handful or two of bittersweet chocolate chips into the batter for a little breakfast indulgence.
3. Make it Zesty
Even a hint of fresh citrus zest can add big flavour to a batch of pancakes. For a citrusy kick, add 15-30 mL (1-2 tablespoons) of zest from a lemon, orange, lime or specialty citrus.
4. Go Nuts
Once you’ve cooked them up, top your pancakes with a rich homemade nut butter or a chocolate hazelnut spread for a delicious breakfast treat.
5. Sub Your Syrup
Whether you’re out of maple syrup or just want to try something new, a little bit of fruit compote can add lots of seasonal flavour to pancakes. To make it, combine 500 mL (2 cups) berries with 50 mL (1/4 cup) honey or sugar, 15 mL (1 tablespoon) of fresh lemon juice, 5 mL (1 teaspoon) of lemon zest and a pinch of salt. Bring mixture to a gentle boil and cook over medium-low heat for 20 minutes, stirring often. Cool for 5 minutes and then spoon over warm pancakes. Or, buy some real fruit preserves to do the trick.
6. Better Butter
Herb-infused butter can add a savoury edge to typically sweet pancakes. Try adding fresh herbs like rosemary, thyme or basil to melted butter. Strain and cool, and you’ll add a new taste to your sweet stack.
