We can all relate to this scenario: You forgot to grab bread at the store and now you’re left bread-less for your kid’s lunch. Or maybe your kid, out of nowhere, declared they simply no longer like sandwiches. Full stop.
Instead of making another grocery run, or packing a sandwich they probably won’t eat, ditch the ‘wich and try one of these kid-approved lunches (or mix up your own lunch routine)!
Warning! Some of these creations may be a little messy. So don’t forget Bounty for easy cleanup.
1. Jazzed-up Apples and Peanut Butter
Pairing apples and peanut butter is good, but it can be even better. In addition to the basic duo, add these for a new tasty treat:
- Banana slices
- Crushed up nuts
- Raisins or dried fruit
Tip: Swap out peanut butter for almond butter, cream cheese or cashew butter for another flavour twist.
If you’re craving a sandwich, switch it up! Combine apples and peanut butter with cinnamon raisin bagels or homemade banana bread. Elvis Presley loved his peanut butter with bacon, bananas and honey. Mix and match ingredients that make you happy.
2. Mini Hot Dog Cornbread Muffins
The corn dog is classic state fair staple, but there’s no reason to make it a once-a-year treat. Try this fun and easy take on the traditional corn dog.
Prep time: 10 minutes
Bake time: 10 minutes
Serves: 6 (4 pieces per serving)
1 package (240 g) cornbread mix
2 hot dogs, each cut into 6 pieces
1. Heat oven to 190 C (375 F) and coat two mini-muffin pans with cooking spray
2. In a medium bowl, combine the cornbread mix according to package directions
3. Scoop 15 mL (1 tablespoon) of batter into each muffin cup
4. Place a hot dog piece in the middle of each muffin
5. Bake 10 minutes, or until it springs back when gently touched and a toothpick in the centre comes out clean
6. Remove from oven and allow to cool for 10 minutes
3. Mini Pizza Muffins
On each half of an English muffin or mini bagel, spread pizza sauce, sprinkle with shredded mozzarella and place under the broiler or in a toaster oven until the cheese is melted.

Cheeses: These will give your muffins new dimension – try adding Parmesan, fontina, ricotta, Monterey Jack or feta.
Meats: There’s a reason why pepperoni is the most popular pizza topping – it tastes great! Check out these meats for even more flavour: bacon, ham, sausage, Canadian bacon or mini meatballs.
Vegetables: The addition of one or more veggies is always great. The most popular include: raw or sautéed onions, fresh or sundried tomatoes, bell peppers and mushrooms.
Tip: For a change of pace, try white pizza muffins! Mix ricotta cheese with garlic, parsley, salt and black pepper. Add pesto topped with ricotta, mozzarella, chopped tomatoes and black pepper. Spread a layer of jarred white sauce mixed with Parmesan and ricotta, sprinkle with chopped red onion and season with black pepper. Top warmed pizza muffin with a fresh spinach arugula mix.
4. Asian Chicken Salad
Combine coleslaw, salad greens, sliced celery, and shredded or chopped chicken and toss together.
A simple dressing can be made with equal parts rice vinegar and soy sauce. Give it some heat with Asian chilli-garlic sauce, a hint of sugar with sweet chilli sauce, or a nutty scent and flavour with toasted sesame seed oil.
Create your favourite filling and roll it into a tortilla or flatbread. Here are a few combinations you can try:
- Roast beef, cheddar cheese and chutney
- Scrambled egg, bacon and jam
- Chicken, avocado and chipotle mayonnaise
Tip: Flatbreads such as lavash, pita and burritos may be used. Also, light, moist slices of bread can be flattened with a rolling pin.
