This versatile chicken and pasta recipe allows for plenty of flexibility for you to throw in mushrooms, olives or whatever you prefer.
Chicken and Sundried Tomato Pasta Recipe

Ingredients
1 box bowtie pasta, cooked
455 grams (1 pound) chicken tenderloins or breast cut in strips
500 millilitres (2 cups) mozzarella cheese, cubed
1 jar sundried tomatoes
Olive oil
2 zucchinis, sliced
2 yellow squash, sliced
Grated Parmesan cheese
Instructions
- Cook the pasta, set aside
- Grill the chicken, zucchini and squash on the stovetop use a grill or saute pan
- Season with salt and pepper when it’s all cooked
- In a large serving bowl, toss chicken, vegetables and pasta with mozzarella cheese, pasta and sundried tomatoes (add the whole jar, oil and all)
- Top with parmesan, serve immediately
