Low-Fat, Heart-Healthy Desserts
Who said you have to skip dessert to stay healthy? Check out these four scrumptious desserts you can enjoy guilt-free!
There's nothing like the winter cold to make us long for high-fat, decadent desserts. But if you're watching your fat intake for health reasons, you may think you have to forego dessert entirely. Fortunately, with these decadent delights, you can indulge and still be ready for swimsuit season.

Fruity Clafoutis

Serves 8

Ingredients
1 6-ounce bag frozen black cherries or blueberries
1 cup flour
1/8 teaspoon salt
1 cup egg substitute
2 cups fat-free evaporated milk
1 tablespoon vanilla extract
Cooking spray

Directions
Preheat oven to 350˚ F. Spray bottom of 9-by-13-inch glass baking dish with nonstick cooking spray. Blend all other ingredients in blender except fruit. Spread fruit evenly over bottom of pan. Gently pour batter over fruit.

Put dish on centre oven rack. Bake for 50 minutes.

Decadent Chocolate Orange Cake

Serves 8

Ingredients
1-1/2 cups white flour
1 cup brown sugar
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1 cup cold water
2 teaspoons pure vanilla extract
2 tablespoons orange juice
Additional flour or cocoa to powder the pan
Cooking spray

Directions
Preheat oven to 375˚ F. Spray bottom of 8-inch baking pan with nonstick cooking spray. Lightly powder with flour or cocoa powder.

Mix dry ingredients — flour, brown sugar, cocoa powder, baking soda and salt — in one bowl. In another bowl, mix oil, water and vanilla extract. Add the dry ingredients and mix. Pour in the orange juice. Pour the batter into the pan. Bake for 25 to 30 minutes.

Tropical Pound Cake

Serves 8

Ingredients
1 low-fat, store-bought pound cake
1 quart low-fat vanilla frozen yogurt
2 kiwifruits (sliced)
2 mangoes (cubed)
1 pineapple (cubed)
3 or 4 oranges (sectioned)

Directions
Cut fruit and place in bowl. Slice pound cake. Pour some of the fruit mixture over each slice of pound cake and top with one scoop of vanilla frozen yogurt.

Banana Cream Pie

Serves 8

Ingredients
1 store-bought, low-fat graham cracker crust
2 bananas (peeled and sliced)
3/4 cup sugar
1/4 cup and 2 teaspoons cornstarch
1/8 teaspoon salt
3/8 cup egg substitute
3 cups milk
1-1/2 teaspoons vanilla extract

Directions
Layer peeled and sliced bananas in bottom of graham cracker crust. Mix sugar, cornstarch and salt in saucepan. Combine milk and egg substitute. Pour milk and egg into saucepan with sugar mixture. Cook over medium heat, and stir continuously. Let mixture reach boil. Boil one minute, stirring. Remove from heat. Stir in vanilla. Pour into graham cracker crust, over bananas. Cover and chill in refrigerator two hours or until set.
